While being in the great outdoors can be a source of inspiration for many things, cooking is often not one of them. After spending the day trekking, climbing, canoeing, or doing all sorts of other activities, it can be hard to pluck up the energy to cook.
As a result, we’ve put together a list of six recipes that serve two to three people, are easy to cook, but also exceptionally tasty and nutritious:
This simple Thai style dish can be prepared in about ten minutes, here are the ingredients:
These Thai Style noodles only require one pot and are extremely easy to cook. Start by heating the oil and frying your meat or tofu if desired. Once cooked, add your carrot for 2 to 3 minutes.
Then increase the heat, and add your red pepper, onion, broccoli, and baby corn for another 2 to 3 minutes. Finally, add your garlic for 1 minute and then add your noodles. Cook the noodles for approximately 10 minutes.
Once everything is cooked, add all your spices, herbs, salt, and pepper, as well as a little extra oil and cook everything while stirring at all times, and voila, it’s ready to serve.
A chickpea stew is another easy-to-cook, one pot camping stove recipe, here’s how you can create your own:
Even easier than our first recipe, a chickpea stew simply requires you to chop everything up and put it in a pot. Start by frying your carrot, onion, potato, and garlic in oil, and then add your chopped tomatoes.
Then add your spices, herbs, salt, and black pepper, and let your pot simmer for 20 minutes while the potato cooks through.
Finally, add your chickpeas and simmer for another 10 minutes. Once everything has been bubbling away for an additional minute or two, it’s ready to serve. You may find you have some leftovers as well!
Chili is a scary, hard to cook dish to some, but this recipe is awesome for camp stove cooking:
Start by cooking your minced meat with a bit of oil until it is browned. Then, add your onion, carrot, red pepper, and courgette until your onion start sweating or turns clear. From there, add your garlic for an additional minute.
Pour your tin of chopped tomatoes onto your mixture and add all your herbs and spices. Let everything simmer for approximately 20 minutes until your mixture thickens. Once your chili is thick, add your square of dark chocolate and kidney beans.
Leave your dish to simmer for an additional 20 minutes on the lowest heat while stirring occasionally before serving.
If you want something that will replenish your energy levels but feels a little lighter, check out this green pasta salad:
Start by cooking your pasta according to the instructions on the packaging. Once cooked, put your pasta to one side. Then, fry up your diced courgette in a little oil. Once cooked, add it to your strained pasta and stir in your pesto.
To finish, fold all your ingredients including your chopped cherry tomatoes and spinach and add salt and pepper to taste. This dish is great hot and cold.
A Spanish tortilla is awesome for breakfast, lunch, and dinner, here’s how you can make it on your camp stove:
Start by frying up a big spoonful of oil or salted butter. Then, add your vegetables and cook them for 3 to 4 minutes on a high heat. Add your chorizo for a few minutes.
Lower the heat and while your ingredients stay warm, whisk your eggs with your spices, salt, and pepper.
Lower the heat on your camping stove and pour the eggs slowly so that they cover your ingredients. Put the lid on your pan and leave on a low heat until the eggs are set. Once set your Spanish tortilla is ready to serve.
Paella is a one pot dish that is filled with flavor and can be cooked with a variety of meats and seafood if you want. Here’s a recipe:
Start by browning your meat if you have chosen to add some to your paella. If so, put that to one side and pour your paella rice into your pan with all your saffron or turmeric. Fry the rice until it starts going clear.
Then, prepare your stock and add it to your pot until it covers the rice. Put the lid on the pan and leave this to simmer on the lowest heat until the stock has been absorbed by the rice.
Once absorbed you can add all your other ingredients as well as some oil. Stir continuously until all your vegetables and seafood are cooked through, and your spices well blended into your dish.
